- 1/2 green bell pepper, diced
- 2 sprigs fresh thyme
- 2 whole cloves
- 1 tablespoon butter or oil
- Salt to taste
Step-by-Step Instructions
Step 1: Soak the Djondjon Mushrooms
Place your dried Djondjon mushrooms in 2 cups of warm water and let them soak for 20–30 minutes. You'll see the water turn a rich, dark black — that's the magic. This liquid is the soul of the dish. Strain the mushrooms out and reserve every drop of that black water. Discard the mushrooms themselves (they've done their job).
Step 2: Sauté Your Aromatics
In a medium pot over medium heat, melt butter or heat oil. Add garlic, bell pepper, thyme, and cloves. Sauté for 2–3 minutes until fragrant.
Step 3: Add Shrimp or Beans

Pour in the reserved black mushroom water. If using coconut milk, add it now and adjust the total liquid to a 2:1 ratio (liquid to rice). Bring to a boil, then add your rinsed rice. Stir once, reduce heat to low, cover tightly, and cook for 18–20 minutes until the rice is fully cooked and the liquid is absorbed.
Step 5: Fluff & Serve
Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork and serve alongside poul ak nwa (chicken with cashews), griot, or your favorite Haitian protein.
